Chalkidiki Black Olives “Throumpa”
Black olives, organic vinegar, Mount Athos oregano, extra virgin olive oil and sea salt.
A very interesting historic looking olive, with a great shine and pleasant moist appearance. A wonderful aroma backed by a subtle butteriness and bitter notes of this olive, the natural production lend itself to beautiful finish.
Harvesting of black olives throumpa, which is a unique variety of the Monastery, takes place in November. The olives are hand picked to prevent the fruit from being injured.
After harvesting, the black olives are transported to the processing area where they are washed and placed in large separate bins.
The olives are remaining into the salt for about 2-3 months in order to drain well and take away bitterness. Then, they are sifted from the salt and washed with vinegar. After they are drained, they are dipped with olive oil and oregano. Then the olives can preserve their flavors in the refrigerator for one year.
